		<description>Hi Claire! I have this problem too. I did make &#039;proper&#039; red velvet cake a few times for the coffee shop (one of the companies - Silver Spoon I think - makes a red colouring that&#039;s not too artificial) but it didn&#039;t sit easily with me for all the reasons you list. Plus, on the ingredients label I had to list the colouring, which felt awful. Plus, people still said &#039;what makes it red?&#039; &amp; I had to say &#039; red food colour&#039; which put many of them off! I decided not to make it again...it just seems to compromise everything I try to represent in my bakery! It&#039;s one of America&#039;s most popular cakes, I know. But I&#039;ll pass from now on! Thank you. It&#039;s not easy, but it is worthwhile! The first bit of advice I would give is believe in yourself. At times, it isn&#039;t easy, but believe in what you&#039;re doing and stay strong. The bad days aren&#039;t always bad and the good days don&#039;t last! As long as you can learn from everything and move on, that will stand you in good stead! (That doesn&#039;t mean you shouldn&#039;t celebrate or commiserate, because of course you should! But don&#039;t get caught up in the highs or the lows as you will have lots of both.)

Book-wise, I&#039;ve not read too much! Spare Room Start Up by Emma Jones is a good place to start. The two books I mentioned above are worth reading too. I devour cake and recipe books and I look for inspiration everywhere. As you said above, planning is important and I have lists everywhere! I learn more from reading blogs these days as they seem more current.

Finally, I&#039;d say there&#039;s a lot of help out there and people are generous with their time. Don&#039;t be afraid to ask and you&#039;re never on your own (though sometimes when my pc isn&#039;t doing what I want it to it seems like I am!). Good luck and enjoy it! You&#039;re following your dream and you have to remember that!</description>

I&#039;ve had a lot of support (and maybe a bit of pressure!) from my friends to start my own cake company. But now that I&#039;m in the process of doing it, I think they don&#039;t understand that it&#039;s a lot more complicated than baking and why I struggle somethimes to make decisions.
Hopefully, I&#039;ll get there... Someday. Before 2020 I hope!
